Nakiri Knife

"Na" meaning "Vegetable" and Kiri meaning "to cut" the Nakiri is the knife used for chopping vegetables. The Nakiri knife has a flat blade edge and may appear to look like meat cleaver however when you peer down at the spine of the blade you will notice it is a very slim blade built to chop through vegetables with speed and precision.

Sujihiki Knife

The Sujihiki knife is a long sharp blade specifically built for slicing. The sharpness and length of the blade on a Sujihiki (similar to Yanagiba) allows its holder to slice through a large piece of fish or steak in a single motion.

Bunka Knife

The Bunka knife is a utility knife that is crafted from strong, thick Japanese steel. The hammered side of the blade also reduces stickiness from starchy vegetables like potato and pumpkin making it the perfect knife for many types of preparation.

All blades are high carbon AUS10 67 layer Damascus Japanese steel. 

The handle wood was sourced from McLaren Vale, the wine region around 40km South of Adelaide. Exactly where we cannot say (our secret shed) then stabilizes and infuses the handles with resin before inserting on top of the blade. We choose from the trees in the area - olive wood, Shiraz grapevines whatever needs to be chopped.

The Damascus steel (AUS10) comes from its Japanese source, Aichi (not far from Nagoya) and it is finished with an ultra-sharp blade edge to assist chopping and slicing.
